Ingredients:

3lbs. of chicken thighs and drumsticks

3/4 pound tomatillos

1 pound poblano peppers

6 ounces Anaheim peppers

2 Serrano or jalapeño peppers

  • 10 ounces yellow onion
  • 6 fresh cloves garlic
  • 1 TBs ground cumin
  • sea salt
  • 1/2 cup cilantro
  • 1 Tbsp. of Asian fish sauce
  • corn tortillas
  • 2 limes

Preparations

  • Cut lime into wedges
  • Remove skin from chicken leave bones
  • Quarter tomatillos remove husk
  • Chop peppers remove seeds and stems
  • Chop jalapenos remove seeds and stems
  • Chop and peel onion

Let’s Get Cooking!

  1. Cooking on medium heat in your pressure cooker add all the ingredients except lime wedges and tortillas
  2. Cook for 4-6 hours or until chicken is cooked completely
  3. Wrap in a corn tortilla and Top with lime juice from the wedges and cilantro and enjoy!

  • 2 tsp. turmeric
  • 2 tsp. paprika
  • 1½ tsp. cayenne powder
  • 3lbs. boneless chicken breast
  • 1 Tbsp. ghee
  • 1½ yellow onion
  • 2 cups canned tomatoes and the liquid
  • 370 ml tomato paste
  • 2 cans of coconut milk
  • 2 tsp. garam masala
  • ½ cup almond
  • ½ cup cilantro
  • 3 tsp salt
  • 2 tsp garlic powder

Preparations

  • Slice almond
  • Chop onions
  • Remove fat and cube chicken
