For extra-tasty results, skip the whole chicken and get yourself legs and thighs. Dark meat is better. All of this is better if the bones are still in. If you cook gumbo long enough, all the meat will pull away from the bones, anyway. But if your guests are squeamish, feel free to use boneless thighs. Do
not
use boneless breast meat.
