1 tsp minced garlic
1/2 tsp dried oregano
1/8 cup chopped parsley

Broil the chicken halves until the skin is golden and just starting to char, and the juices run clear when you pierce the thigh where it joins the breast. While the chicken is cooking, prepare the lemon sauce: whisk together the lemon juice, olive oil, vinegar, garlic, oregano and chopped parsley, plus salt and pepper to taste. Using a very sharp knife, cut each cooked chicken half into pieces (with each breast cut into thirds). Place the chicken pieces on a baking sheet that has sides, and pour the sauce over the chicken. Put the chicken and sauce under the broiler for four or five minutes. Serve the chicken with the sauce, and plenty of crusty bread so your guests can mop up the sauce.
