Slicer

This was a closeout floor model that I bought years ago. Before going on the low sodium diet I used to buy deli meat in bulk and slice it
myself. Now it’s most often used to slice a roast or smoked piece of meat for sandwiches.

Slow Cooker

I’ve tried to avoid calling it a Crock-Pot, which is a trademark of Rival. Anyway, whatever the brand, no kitchen should be without one.

Smoker

This was another pre-diet purchase that has been used even more since. The one I have is a Brinkman that originally used charcoal. I bought an add-on electric heat source for it that works a lot better in cold weather. Not only do I like the way it does ribs and other traditional smoked foods, but we also use it fairly regularly to smoke a beef or pork roast or turkey breast to use for sandwiches.

Springform Pan

A round, straight-sided pan. The sides are formed into a hoop that can be unclasped and detached from its base.

Steamer (Rice Cooker)

I use this primarily for cooking rice, but it’s really a Black and Decker Handy Steamer Plus that does a good job steaming vegetables too. It does make excellent rice, perfect every time. So I guess the bottom line is that those of you who have trouble making rice like me (probably because like me you can’t follow the instructions not to peek) should consider getting one of these or one of the Japanese-style rice cookers.

Stockpot

The key here is to spend the extra money to get a heavy-gauge one (another thing I eventually learned from personal experience). The lighter-weight ones not only will dent and not sit level on the stove, but will burn just about everything you put in them. Mine also has a heavy glass lid that seals the moisture in well.

Turbocooker

Another infomercial sale. It is a large, dome-lidded fry pan with racks that fit inside it. You can buy them at many stores too, but mine is the “Plus” model that has two steamer racks and a timer. It really will cook a whole dinner quickly, “steam frying” the main course and steaming one or two more items. The only bad news is most of the recipes involve additions and changes every few minutes, so even if you only take a half hour to make dinner, you spend that whole time at the stove.

Turkey Fryer

Mine is a KingCooker. These have gotten really popular in recent years. The upside is that you can cook a turkey quickly (about an hour for a bird less than 20 pounds) and that the result is juicy and crispy skinned. The down side, of course, is the extra fat that gets absorbed.

Waffle maker

We don’t use this often, but it makes a nice change of pace for breakfast or dinner.

Wok

A round-bottomed pan popular in Asian cooking.

Dick Logue
had a low sodium lifestyle forced upon him when he was diagnosed with congestive heart failure. He decided to use his love of cooking to help him create low sodium versions of the foods he loved. He lives on a little farm in the woods of southern Maryland with his wife Ginger, two of their three children, and an assortment of animals.
